Refrigerator Pie

Ingredients:

1 pie crust
1 cup heavy cream, half-and-half, or milk
2 eggs
2 pinches salt
Nutmeg
Your choice of two or three of any the following fillings:
  • Cooked spinach
  • Bacon
  • Sauteed leeks
  • Cooked spinach
  • Artichoke hearts
  • Cooked Chicken
  • Cooked cubed ham
  • Mushrooms
  • Cheese
  • Blanched asparagus
  • Smoked salmon
Directions:
  • Whisk together thoroughly the milk and eggs in a metal bowl.
  • Mix in salt and nutmeg.
  • Heat oven to 350.
  • Put fillings in crust loosely and evenly.
  • Pour egg mixture over filling (DON'T OVERFILL)
  • Bake until firm like Jell-O (about 45 minutes).
  • Cool 15 minutes before serving.
