Mashed Sweet Potatoes

Serves 8

Ingredients:

3 lbs. sweet potatoes, peeled and cut into chunks
½ stick butter
½ banana, sliced
Zest and juice of one orange
1 cup chicken broth
½ cup brown sugar
½ tsp nutmeg
Salt and freshly ground pepper

Directions:
  • Boil potatoes until tender
  • Drain
  • Return the pot to the stove top
  • Cook banana slices for 5 minutes
  • Add the juice of one orange to the pot (reserve the zest)
  • Allow the juice to cook down for one minute
  • Add potatoes to the pot with sugar and broth
  • Mash until well combined
  • Season with nutmeg, salt, pepper, and orange zest to taste
  • Mash to combine spices and serve
