Impossibly Easy Cheeseburger Pie

-Recipe from "Betty Crocker Ultimate Bisquick Cookbook"

serves 6

Ingredients:

1 pound extra-lean ground beef (you can also use ground turkey or ground chicken)
1 large onion (chopped)
1/2 tsp salt
1 cup shredded reduced-fat cheddar cheese
1/2 cup Bisquick Heart Smart mix
1 cup fat-free (skim) milk
2 eggs

Directions:
  • Pre-heat oven to 400 degrees
  • Spray a 9-inch glass pie plate with cooking spray
  • In a 10-inch skillet, cook ground beef and onion over medium heat for 7-10 min, stirring frequently until beef is thoroughly cooked
  • Drain the cooked meat before proceeding
  • Sprinkle with salt, then spread in pie plate and distribute cheese over the top
  • In a medium bowl, stir all remaining ingredients together with a wire whisk or fork until blended
  • Pour into pie plate with meat
  • Bake about 25 min or until knife inserted in the center comes out clean.
