Tortellini & Sausage Soup

Contributed by Jean Phillips, Martinez Ward

I made this one up using some of my favorite things.

Ingredients:

1 lb. fresh sausage (I use the fresh chicken & apple sausage from Lunardi's Market)
1 cup leeks chopped fine
3 cloves garlic minced
7-8 cups of chicken broth
4 carrots
3 cups cut up chard. (you can substitute spinach if you like)
20 oz. pkg of Herb Chicken Tortellini by Butoni

Directions:
  • Remove fresh sausage from casings and form into small balls.
  • Brown them in a pan with garlic and leeks, adding water if needed to keep it from scorching.
  • Put sausage, chard, and sliced carrots into soup pot with broth and simmer for about 1/2 hour until carrots are tender.
  • Add tortellini and boil about 10 minutes.
  • Serve with your favorite bread.
