Chinese Simmered Chicken

Contributed by Olivetta Chavez, Concord 1st Ward

This recipe was on a plastic bag holding a chicken. I've had it since the early 80's.

Ingredients:

1 whole chicken, skinned
1 Tbsp oil
1/3 cup soy sauce
1/2 cup water
1 Tbsp catsup
1/4 cup apple juice
1/2 tsp crushed red pepper
1 garlic clove
1 green onion, sliced

Directions:
  • Heat oil in Dutch oven.
  • Brown chicken on all sides.
  • Mix together ingredients.
  • Pour over chicken.
  • Cover.
  • Bring to a boil and then simmer 45 min. to 1 hour until done.
  • Serve with rice, green beans and salad.
