Poppy Seed Chicken

Ingredients:

3 cups diced cooked chicken
1 can cream of chicken soup
16 oz sour cream
8 oz Ritz crackers, crushed (2 packages)
1 stick butter or margarine (melted)
1 Tbsp. poppy seeds

Directions:
  • Mix chicken, soup and sour cream together.
  • Mix crackers, margarine and poppy seeds.
  • Add 3/4 of cracker mix to chicken / soup mixture.
  • Place in 8" x 8" pan.
  • Sprinkle the rest of the crackers mix on top.
  • Bake about 30 minutes at 350.
Helpful Hints:
  • I cook skinless, boneless chicken breasts in the microwave and cut them up. I measure out what I usually use for a recipe and put it in a bag. I freeze the chopped chicken, then it is ready for when I need it for this recipe, so it goes together really fast.
  • I usually double the recipe for a 9" x 13" pan.
  • I crush the crackers in a plastic bag with a rolling pin or by hand.
  • After you put this together it freezes well.
