Ingredients:
1 can cream of chicken soup
16 oz sour cream
8 oz Ritz crackers, crushed (2 packages)
1 stick butter or margarine (melted)
1 Tbsp. poppy seeds
Directions:
- Mix chicken, soup and sour cream together.
- Mix crackers, margarine and poppy seeds.
- Add 3/4 of cracker mix to chicken / soup mixture.
- Place in 8" x 8" pan.
- Sprinkle the rest of the crackers mix on top.
- Bake about 30 minutes at 350.
Helpful Hints:
- I cook skinless, boneless chicken breasts in the microwave and cut them up. I measure out what I usually use for a recipe and put it in a bag. I freeze the chopped chicken, then it is ready for when I need it for this recipe, so it goes together really fast.
- I usually double the recipe for a 9" x 13" pan.
- I crush the crackers in a plastic bag with a rolling pin or by hand.
- After you put this together it freezes well.
