Colorado Baked Beans

This is my favorite bean recipe. We purchase the Anassazi beans in Dove, Colorado.

8-10 servings

Ingredients:

1 pound dry Anassazi beans washed (there is no need to soak the beans)
2 cups of orange juice
2 cups of water
1-8 oz can of tomato sauce
¾ cup of chopped onion
¼ cup molasses
2 T Worcestershire sauce
¼ lb salt pork cut in small pieces (I have added left over pork and ham hocks on occasion)

Directions:
  • Mix all ingredients in a 3 quart oven-proof dish.
  • Bake, covered, in a preheated 300 degree oven for 3 hours until beans are softened but still slightly firm.
  • Uncover stir and bake at increased heat of 325 for another 30 minutes longer or until beans are soft (but not mushy) and sauce has thickened to desired consistency.
