Preheat oven to 350 degrees F
Butter a 9x13" casserole dish
Serves 6-8
Ingredients:
3 cups cooked rice
2-1/2 cups cooked broccoli
3 cups cooked, cubed chicken
2 cans (10.75 ounce) condensed cream of chicken soup
1 cup mayonnaise
1-1/2 teaspoons lemon juice
1/2 tsp. curry powder
1-1/2 cups shredded Cheddar cheese
1-1/2 cups soft bread crumbs
1 Tablespoon melted butter
Directions:
- Layer rice, broccoli and chicken in 9x13" casserole dish.
- Combine soup, mayonnaise, lemon juice, and curry power in a bowl.
- Pour soup mixture over rice, chicken, and broccoli.
- Sprinkle cheese over mixture.
- Brown bread crumbs in butter and sprinkle over top.
- Bake in preheated oven for 30 minutes.
- Serve
