Mexican Red Rice

Ingredients:

1 cup rice
2 Tbsp oil
2 tomatoes
½ Onions
2 cloves of garlic
1 cup water
Salt (to taste)

Directions:
  • Wash the rice and let it dry for about 10 minutes
  • While rice is drying, combine tomatoes, onions, and garlic with 1 cup of water to make salsa
  • In a large pot over high heat, heat oil and rice stirring constantly until the color of the rice changes to translucent (almost clear)
  • Put salsa over the rice
  • Cover the pot, and reduce heat to low
  • Simmer until water evaporates
  • Serve and enjoy!
