Frozen Strawberry Crumble

Ingredients:

1 cup sifted flour
1/2 cup chopped walnuts
1/4 cup brown sugar
1/2 cup butter (melted)
2 egg whites
1 cup sugar (if using frozen berries reduce sugar to 2/3 cup)
2 cups sliced strawberries OR 1-10 oz bag frozen berries thawed
2 Tbsp lemon juice
1 cup whipped cream or Cool Whip

Directions:
  • In bowl, combine flour, walnuts, brown sugar, and melted butter
  • Spread crumbly mixture into baking dish
  • Bake at 350 for 20 minutes, stirring occasionally
  • Once baked, sprinkle 2/3 of crumble mixture in bottom of 9x13 pan
  • In large bowl, combine egg whites, sugar, berries and lemon juice
  • Beat at high speed to stiff peaks (about 10 minutes)
  • Fold in whipped cream (or Cool Whip)
  • Spoon over crumble mixture in pan
  • Top with remaining crumble mixture
  • Freeze 6-8 hours or overnight
  • Cut into 10-12 squares when ready to serve
