Chocolate Chip Pumpkin Bread

Ingredients:

2 ½ cups of sugar
3 ½ cups of flour
2 tsp cinnamon
2 tsp nutmeg
1 ½ tsp salt
2 tsp baking soda
1 cup vegetable oil
2/3 cup water
1-15 oz can pure pumpkin (NOT pumpkin pie filling)
2 eggs, beaten
6 to 12 ounces semisweet chocolate chips

Directions:

  • Preheat oven to 350 degrees
  • Lightly grease three 8x4 inch loaf pans or two 12-compartment lined muffin pans
  • In a large bowl, combine dry ingredients: sugar, flour, spices, salt and baking soda
  • In a medium bowl combine oil, water, pumpkin puree and eggs
  • Add liquid mixture to flour mixture and combine thoroughly
  • Add chocolate chips and stir to combine
  • Bake 45-50 minutes until toothpick comes out clean
