Chinese Chicken Casserole

Ingredients:

4 cups cooked chicken (cubed)
1 cup diced celery
1 cup cooked rice
¾ cup mayonnaise
1 cup fresh mushrooms
2 tsp. lemon juice
4 tsp. chopped onion
1 tsp. salt
1 can cream of chicken soup
1 can water chestnuts (drained and slivered)
1 stick of butter
½ cup slivered almonds
2 or more cups crushed cornflakes

Directions:
  • Preheat oven to 350 degrees
  • Combine all ingredients except butter, almonds, cornflakes.
  • Put into a 9 x 13” casserole dish.
  • Melt butter.
  • Pour melted butter over top of casserole.
  • Spread cornflakes and almonds over top of casserole.
  • Bake at 350 degrees for 35 minutes.
  • Serve
