Ingredients:
4 cups cooked chicken (cubed)
1 cup diced celery
1 cup cooked rice
¾ cup mayonnaise
1 cup fresh mushrooms
2 tsp. lemon juice
4 tsp. chopped onion
1 tsp. salt
1 can cream of chicken soup
1 can water chestnuts (drained and slivered)
1 stick of butter
½ cup slivered almonds
2 or more cups crushed cornflakes
Directions:
- Preheat oven to 350 degrees
- Combine all ingredients except butter, almonds, cornflakes.
- Put into a 9 x 13” casserole dish.
- Melt butter.
- Pour melted butter over top of casserole.
- Spread cornflakes and almonds over top of casserole.
- Bake at 350 degrees for 35 minutes.
- Serve
