Chicken Burrito Wraps

  • Boil or steam 2 cups of rice.  
  • While rice is steaming, combine the following ingredients in a skillet on the stovetop and bring to a low simmer:
2 cups cut up chicken
1 can stewed tomatoes
2/3 cup chopped cilantro
1 can rinsed black beans
1 pkg taco seasoning mix
2 Tbsp. chopped jalapeno peppers
  • Once the rice is cooked, stir in the 2 cups cooked rice.
  • Add 1 cup shredded cheese over top of mixture in skillet.
  • Cover and cook until cheese is warm and melted.
  • To serve, place 1/2 - 1 cup of mixture in tortilla shell and enjoy!
